Parasol mushroom
Macrolepiota procera
Parasol mushroom is a large edible mushroom in the mushroom family, prized for its delicate flavour and aroma. It is characterised by a large cap between 10 and 40 cm in diameter, covered with brown scales, and a white-brown stem that can grow up to 40 cm in height. Young fruiting bodies resemble brown or flesh-coloured balls, while adult fruiting bodies are hat-shaped.
Valued in the kitchen for its flavour and aroma, it is rich in minerals, beta- and alpha-glucans, which contributes to better health, lowering cholesterol and reducing the risk of disease. It contains bioactive substances with antioxidant, antibacterial and anticancer effects, as well as indole compounds that support the nervous system.
